Mini Oreo Cheesecake Cupcakes

Finally I make another cheesecake after failing before! My previous cheesecake was too sweet, VERY sweet even for a sweet tooth (me), because I forgot the measurement of the sugar (SO,I threw a lot of sugar in the batch and crossed my fingers :p). I found out this recipe taste better but I don't like it very much. It is not sweet enough for me, so I topped them with nutella :9 . Maybe I'll add some sugar next time.

Ingredients : (makes 30)
  • 42 cream filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped (but I used oriorio *I think it's a fake oreo brand?* because I can only found double stuffed oreos in the store)
  • 2 pounds cream cheese, room temparature (I used original philadelphia cream cheese)
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs, room temperature, lightly beaten
  • 1 cup of sour cream 
  • pinch of salt
Methods :
  • Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup. 
  • With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat them until combined. Beat in vanilla.
  • Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.



  • Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire rack to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

    Vanilla and Strawberry Pudding

    I had some leftover strawberries in my fridge after making strawberry cupcakes a few days ago. So, I decided to make a dessert from it instead of throwing them away.


    I know, I know, it looked like panna cotta but it is not. I made it out off instant jelly powder. I followed the methods in the packaging but I substituted water with milk and add some vanilla extract (for the vanilla pudding). And the red part was made from pomegranate jelly powder--I prefer using them as the color is more vibrant than the strawberry jelly powder--and sliced strawberries :)

    I made it for my sisters since I asked them to buy me chocolates and they did yaayyy :D

    Late Christmas Post

    MERRY CHRISTMAS! 
    Good Morning :) How's your Christmas yesterday? Did you go to church? :D I just woke up and ate some cupcakes. I'm VERY hungry right now.. the cupcakes are too small yet too adorable in it's size -,- Still tasty tough.

    I don't really enjoy this year's Christmas because I don't have my sisters here. I miss them... despite fighting and arguing with them all the time. But they will be here in Chinese New Year! They're coming home today and will stay for one and a half months. I think we will have more fight! :p

    Chocolate Cookie House

    Hi everybody! Have you prepared everything for Christmas? :) Well I did, and I want to share what I have made this year. I baked a chocolate cookie house today! I got the recipe from Living (Martha Stewart) magazine or you can check it online here!
    I baked the cookie as directed and decorated them with royal icing and candies.

    This is my chocolate cookie house :D
    Had some trouble when I was cutting the cookie dough. And bigger trouble while stacking it. Quiet difficult :S It kept falling apart but at least I can finished it at the end :D I'm SO happy with everything since this is my very first time making a cookie house! 
     I printed the pattern from google. Now, go ahead and make your own! By the way, I will bring this cookie house to my aunt's house tomorrow. We will have a family Christmas celebration. We did it every year, it's almost like a tradition. I really hope they'll like it! :D

    It's Mother's Day!

    Happy Mother's Day dear all mothers in the world! (especially to my mom <3, I love you mommy!) Here back in my home, my grandma always makes tangyuan (also known as kue onde) due to the celebration of Dongzhi Festival in Mother's Day. It is one of the most important festivals celebrated bye the Chinese during Dongzhi solar term (winter soltice) or on Mother's Day (22 December) here! My mother usually makes tangyuan too, but not this year, she's too busy. If you're wondering how tangyuan look alike take a look at this pic :

    This is not mine, I search for it in google because I already ate mine without taking the pic *too hungry*





     I like tangyuan! It's sweet and chewy :9. About two or three years ago, I wanted to make these in rainbow colors (adding blue, purple, yellow, orange and more!) but -unfortunately- my mother and sisters (i have 3 sisters btw :p) didn't allow me to by saying "EWWWW" in my face.. *sigh* maybe I can do it next year without telling them :P

    Pink Piggy Cupcakes (Strawberry Cupcakes)

    Hi bloggers! :) How's your day? I want to share this recipe (not my own recipe, found it somewhere) - Strawberry Cupcakes! I hope you like it :D 

    Ingredients : (makes 12 - 15 standard size cupcakes *my batch makes 14)
    1 1/2 tsp baking powder
    10 drops strawberry essence *optional
    1/2 cup spectrum organic shortening
    1 1/2 cup cake flour 
    1/4 tsp salt
    1 cup thawed frozen strawberries (enough berries to yield 1 cup puree)
    1 cup sugar
    1 tbsp powdered milk
    2 tsp vanilla extract 
    4 large egg whites 

    *if you like it more pinkish add some gel food coloring to avoid more liquid in batch 

    Method :

    1. Preheat oven to 350 and line a 12 cup muffin pan with cupcake liners.




    2. Take thawed strawberries and drain the juice from them. Puree berries with a food processor or a stick blender.
    3. Cream shortening, vanilla, sugar, and strawberry essence (if using) until light and fluffy. Add the egg whites one at a time, beating well after each addition.
    4. Sift together dry ingredients. Add alternately with strawberry puree in 3 additions, beginning and ending with flour mixture mix well after each addition.


    5. Fill cupcakes 2/3 full. Bake for 17-20 minutes. Remove from the oven and let cool in pan for a minute. Then place on a wire rack to cool completely. 

    6. Decorate!! 


    These are my cupcakes :D I top them with whipped strawberry cream and some candy for the ears.

    Ronaldo's apple strudel and pastries

    Hello Hello Hello Hello HELLO BLOGGERS! My name is Patricia-what a short name-and this is my very first time blogging and my very first post. I am a student, age 14, with a dream to become a pastry chef.


    Yesterday, I went to Kuningan City to meet my mom's friend. She had just opened a little pastry shop (Ronaldo's apple strudel and pastries) and asked my mom to visit her. I bought (my mom did) some eclairs there.


    Super delicious! I had some trouble eating them though. The filling came out from it's bank every time I bit it :s Kinda reminds me of poop. It also spilled on my shirt! My favorite one is blueberry -so good- 



    I wish someday I will have a pastry shop of my own. By the way, I'm baking strawberry cupcakes right now (going to post it!) and I think they're burning so, TA-TA!
