Chocolate Cornets

Japanese Bread! I know I said this quite a lot, but it's another recipe from cookingwithdog! YAY :D 


I've seen this before on the internet. It has a cute shape of POOP or shell, but I prefer poop anyway :P
But DOESN'T taste like it. It's filled with chocolate and taste nice!

I don't make bread as much as I bake cakes. So I was so shock when I saw my bread dough puff up that much..

I had an enjoyable time making this, since I made them together with my sister, her friend, and my lil' cousin ~(^_^~)(~^_^)~ I think I'm going to try another bread recipe when my sisters came home on 26th!

Wedding Cake Pops

What's cuter than a cupcake? A cake pop of course!-Bakerella

My aunt gave me a cake pop-ing book from bakerella last week. Reading it again and again doesn't bore me at all. Every page consists uber cute masterpiece! Makes me wanna make them :p

A cake pop is basically a mixture of cake crumbs and frosting which rolled into ball on a stick. Something you can make with left over cake in a fancier and sweeter form ;;)
So, I made some for my cousin's wedding on June 9th as a wedding gift :) Here they are :

I use Bakerella's chocolate cake and chocolate butter cream recipe. I'm too lazy to type it :$ just open their website or use your favorite recipe.

another post after a long break

Hi, it's been a long time since my last post. Do you miss me? ;;)
Actually during the long break, I have cooked/baked some food I wanna post in here. But I am (will always will- I guess) too lazy to search the photos that are buried under other 2,525 *catchy number, eh?* photos. It's like trying to find a needle in a haystack, you know.

So, I only have two of them in hand right now. Meringue Cookies and Kani Cream Korokke (another food from runnyrunny999)

Green Tea and Chocolate Meringue

Kani (Crab) Cream Korokke

 MERINGUE :

I'm going to talk about the meringue first, so that you don't get confused :p I think making meringue cookies is like making macarons but minus almond meal? It's easy and only took FEW ingredients to make for the basic ones (egg whites, sugar, vanilla extract, and cream of tartar). You can skip the cream of tartar and add a pinch of salt instead. SEE?! You can make this anytime. If you don't have those ingredients I guess there's something wrong with you *teehee*

Swiss Meringue Cookies
recipe adapted from somewhere

-4 egg whites 
-1 cup of sugar 
-a pinch of cream of tartar/salt
-1/4 tsp vanilla extract or other flavorings

1. Put everything except vanilla in a double boiler (You put ingredients in a heatproof metal bowl, then put the bowl on a pan filled with water)
2. Constantly whisk the mixture until it's warm to the touch or water is simmering (just almost boiling point, not boiled)
3. With an electric beater/stand mixer, whip up the egg whites until stiff and glossy peaks form. 
4. Then, put your flavoring and mix until just combine.
5. Pipe / scoop dough onto a cookie pan (greased and lined with a cookie sheet or parchment paper)
6. Bake on a preheated oven (100 degrees celsius) for 50-60 minutes.

Notes :

To make green tea meringues -add 2 tbsp green tea powder
        chocolate           -add 2 tbsp cocoa powder 

*I always add 1/4 tsp vanilla extract for any flavor though*

In the video, he (the cook) divided his dough into four pieces. I think it's too big, so I made mine into 13 balls *I gave my maid two balls BEFORE I took the photo. I DIDN'T eat it*

Red Velvet Cupcakes with Whipped Cream Cheese Frosting

FIFTH red velvet cupcakes recipe I tried and the BEST one! :D
I'm so happy with this recipe. Unlike other red velvet cupcakes, I found this more chocolatey. Not just slightly chocolate.


The frosting is light but you can still taste the cream cheese. The previous red velvet cupcakes used regular cream cheese frosting (not whipped). All of them are runny and too sweet! (Back here in Indonesia, my cooking teacher told me that we can't make the regular ones because of the weather is too hot) But this one is pipe-able and really holds it's shaped. Not to mention, they taste even better!

Give it a try! 

Hershey's Red Velvet Cake
makes 12 cupcakes
1/4 cup unsalted butter, softened
1 egg
1/2 cup buttermilk (buttermilk substitute : just under 1/2 milk + 1/2 tbsp vinegar or lemon juice)
1 cup All-Purpose flour
1/2 tsp salt
1 1/2 tsp vinegar
3/4 cup sugar
1/2 tsp vanilla
1 tbsp red food color (I used oil-based food coloring)
2 1/2 tbsp + 1/2 tsp cocoa powder
3/4 tsp baking soda

Directions
1) Preheat the oven to 350F.
2) Sift together the dry ingredients (cocoa powder, flour and salt).  Set aside.
3) Beat the sugar and butter. Add in the egg and vanilla.
4) Stir together the wet ingredients (food coloring and buttermilk) in a measuring cup. Set aside.
5) Alternatively add the wet and dry ingredients into the sugar/butter/egg batter.
6) Mix in the baking soda first and then the vinegar.
7) Bake for 18-20 minutes. Test for doneness with a toothpick.  If crumbs are sticking to the toothpick, then they are done. They will finishing baking in the cupcake pan from the residual heat for a minute or two.  

Whipped Cream Cheese Frosting 
generously frosts 12 cupcakes and then some :)
1 cup heavy whipping cream (I used Rich's non-dairy whip topping)
1/2 tsp unflavored gelatin or jelly powder
1 tbsp hot water
4 oz cream cheese, softened
1/2 cup sugar (I used powdered sugar)
1/4 tsp vanilla extract
2 tsp sour cream (I used yogurt instead)

Directions
1) Dissolve the gelatin in hot water and set aside.
2) Whip the heavy whipping cream in a chilled bowl with a chilled whisk. Once soft peaks are achieved, add the gelatin mixture. Continue beating until the peaks become stiff. Remove from mixing bowl and set aside.
3) With the uncleaned mixing bowl, add the remaining ingredients and mix until combined.  
4) Fold in the whipping cream until incorporated.

M&M's Cookies

Laura Vitale's M&M cookies recipe to die for! I directly made them after watching this video. The cookies' texture is chewy (not crispy) and works great with the M&M's :D

I 'sacrificed' my whole M&M's stock to made these :P 
This recipe is so worth to try. Go ahead and make one! 

Recipe: (Makes 4 Dozen)


Ingredients:
2 ¼ cups All Purpose Flour
1 tsp Salt
1 tsp Baking Soda
2 Eggs
1 tsp Vanilla Extract
1 cup of Unsalted Room Temperature Butter
¾ cup of Granulated Sugar
¾ of a Cup of Brown Sugar
2 cups of Milk Chocolate M&Ms

Process:

1) Preheat your oven to 375 degrees.

2) Combine together the first 3 ingredients and set aside.

3) In a mixer bowl fitted with a paddle attachment, cream together the butter and both sugars. Add the eggs and vanilla and mix together until all creamy and combined. Scrape down the sides of the bowl to make sure everything is mixed well.

4) Add the dry ingredients and mix just to combine. Add the m&ms and mix just to distribute them through the batter.


5) Using a small ice cream scoop, drop the cookie dough 2 inches apart on a parchment lined baking sheet and bake for 9 to 11 minutes, until lightly golden brown around the edges.
6) Cool for 5 minutes on the baking sheet then remove onto wire rack and cool completely.

Matcha (Green Tea) and Chocolate Swirl Cupcakes

Hey there my-blogger-reader-who-i-do-not-know! Does any of you love matcha? I sure do like love it. I've tried matcha served as latte, milk, ice cream, cookies, cake, pudding, macaron, mochi, and many more. And they always taste GREAT. Thank you matcha discoverer man/woman! 

Anyways, a couple days ago, my buddy Michael ordered some chocolate cupcakes from me. Then I asked him whether he wanted it mixed with green tea or not. And he said okay. So, I made them for him :D
RECIPE below : 

This is actually Bakerella's bundt cake recipe. But I baked them in cupcakes (one batch makes 36 cupcakes or one 12-cup bundt cake) and they still taste great :)

You will need :

Chocolate Mixture
1 1/2 cups all-purpose flour
1/2 cup cocoa
1 1/2 tsp. baking powder
1/2 tsp. salt
Matcha mixture
1 1/2 cups all-purpose flour
2-3 Tbsp matcha powder
1 1/2 tsp. baking powder
1/2 tsp salt
Wet ingredients
3 cups sugar
1 cup unsalted butter, room temperature
3 eggs, room temperature
1 3/4 cup milk, room temperature
1 tsp vanilla

Method :

  • Preheat oven to 325 degrees.
  • Grease and flour (or cocoa) a 10 or 12 cup Bundt pan. (If using a 10-cup pan, you can reserve any extra batter for cupcakes.)-or line cupcake pans with cupcake liners
  • With a wire whisk, mix the dry ingredients for the chocolate mixture in a small bowl and set aside.
  • In another small bowl, do the same for the matcha mixture.
  • Using a mixer, cream the butter and sugar. Add the eggs, milk and vanilla and mix until thoroughly combined.
  • Divide the creamed mixture evenly in two separate bowls.
  • Slowly add the chocolate mixture to one half of the creamed mixture and mix thoroughly.
  • Then, add the matcha mixture to the other half of the creamed mixture and mix thoroughly.
  • Drop alternating spoonfuls of each mixture into the bundt pan until it’s about 3/4 full.
  • For a marbled effect, gently run a knife through the two batters in a swirling motion. (Once or twice will do the trick.)
  • Bake for about 1 hour and 15 minutes.-for cupcakes : 20-25 minutes

I frosted them with whipped white chocolate green tea ganache

Nadya's Birthday / Canon Camera Cake

Somebody's celebrating her birthday on May 3rd! ;;) My best friend, Christie Nadya turned 15 that day. I had been planning to bake her a camera sculpted cake since she's pretty much into photography. I didn't turn out as I wanted though :S 

Well, this is.. you know.. what I wished mine would looked like :

WOW. Such a big contrast. *blush*
I'm quite happy with it because it's my first? or second? time sculpting a cake. In fact, practice makes perfect right? I'll just have to learn and practice more about cake sculpting :D

After everything's ready, me and and 'the birthday squad' headed to her house to surprise her.

The Most Dangerous Chocolate Cake Recipe in the World!

What will you do when you're craving for chocolate cake?

a.Do nothing
b.Sleep and dream eating it
c.Make one in 3-minute time!


In 3-minute time?! SERIOUSLY?! YES! I got this recipe from yoyomax (search in youtube). So, why does it called the most dangerous chocolate cake? Because it's so easy to make and takes only a few ingredients that you can make it anytime! Here's the recipe :D


This is my sister helping me in the kitchen :D
Ingredients :


-4 tbsp flour
-4 tbsp sugar
-2 tsp  cocoa powder
-1 egg
-3 tbsp milk
-3 tbsp oil (I use vegetable oil)
-a dash of vanilla extract 
-3 tbsp chocolate chips (optional)


Method :

-Mix the dry ingredients with spoon (flour, sugar, cocoa).
-Add egg, milk, oil, and vanilla extract. Stir until it forms a smooth batter.
-Stir in chocolate chips
-Place mixture in a microwave-safe mug and microwave on high for 3 minutes.
-Serve it warm with ice cream, chocolate sauce, whipped topping or anything you think will work.

*You can mix it directly in the mug but make sure it's big enough

I kinda over-filled the batter. And it messes up my microwave a bit. My sister wanted to make another one and I let her. This time, I used a bigger mug and it turned out better!

RAINBOW CAKE!

I know I said "...so I'll just have to go slow and write type them one by one.." But I changed my mine. I'm too lazy to recollect my previous photos. And I think I'm just going to go trough to what-i-really-want-to-post and do it right know! 

Have you heard about rainbow cake? Of course!  

I always browse the internet to find a rainbow cake recipe, but usually, I end up with colored white cake mix cake, instead a do-it-yourself-from-scratch recipe. One day, a  friend (big thanks to her!)gave me a white cake recipe (from scratch!) that taste slightly vanilla and really white (SO! I can divide  the batter and color them rainbowly :P). It took so many egg whites though.. 

IF you're wondering "Why rainbow cake?" it's simply because of my obsession with RAINBOWS! Rainbow is just so beautiful ;;) It made me want to eat them. I've always been so curious how does a rainbow taste like? Does it taste like m&m's? Gummy bears? Fruits? I STILL don't know YET. Even though this cake only give me a vanilla taste, it satisfy me a bit. It's like eating a rainbow in a plate (I DID NOT eat directly with my face on the plate, I spooned it!). 

I made rainbow jello too, but you know, it's from a box not a do-it-yourself-from-scratch which I didn't really enjoy making. But it still taste great, once again, it's like eating a rainbow! :)

Chocolate Cookie House

Hi everybody! Have you prepared everything for Christmas? :) Well I did, and I want to share what I have made this year. I baked a chocolate cookie house today! I got the recipe from Living (Martha Stewart) magazine or you can check it online here!
I baked the cookie as directed and decorated them with royal icing and candies.

Had some trouble when I was cutting the cookie dough. And bigger trouble while stacking it. Quiet difficult :S It kept falling apart but at least I can finished it at the end :D I'm SO happy with everything since this is my very first time making a cookie house! 
 I printed the pattern from google. Now, go ahead and make your own! By the way, I will bring this cookie house to my aunt's house tomorrow. We will have a family Christmas celebration. We did it every year, it's almost like a tradition. I really hope they'll like it! :D
